Campfire Chili

Dutch Oven Campfire Chili
Ingredients:
- 1 pound ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions:
- Heat up your Dutch oven over the campfire or charcoal briquettes.
- Add the ground beef or turkey to the Dutch oven and cook until browned. Remove any excess fat.
- Add the diced onion, garlic, and bell pepper to the Dutch oven and cook until the vegetables are softened.
- Stir in the diced tomatoes, kidney beans, black beans, tomato sauce, chili powder, cumin, salt, and pepper.
- Cover the Dutch oven with the lid and let the chili simmer over low heat for about 1 to 2 hours, stirring occasionally.
- Taste and adjust seasonings if needed.
- Serve the chili hot, garnished with your choice of optional toppings.
Note: Adjust the cooking time and heat as needed depending on the intensity of your campfire or the number of charcoal briquettes you use. The number of briquettes needed is generally around 1.5 times the diameter of the Dutch oven for the top and half the diameter for the bottom.
