Campfire Breakfast Pizza

Wake up to a breakfast that’s just as exciting as dinner around the campfire! This Campfire Breakfast Pizza combines a crispy pizza crust, fluffy eggs, melty cheese, and your favorite breakfast toppings into one delicious meal. It’s easy to make in a cast iron skillet or Dutch oven, making it the perfect breakfast for your next camping adventure.

Ingredients

  • 1 refrigerated pizza crust or pre-made pizza dough
  • 1 tablespoon olive oil or cooking spray
  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 pound breakfast sausage, cooked and crumbled
  • 1 cup frozen hash browns (thawed) or cooked diced potatoes
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • Chopped green onions (optional, for garnish)

Utensils Needed

  • 10-12 inch cast iron skillet or Dutch oven
  • Campfire grate
  • Mixing bowl
  • Whisk or fork
  • Spatula
  • Knife and cutting board
  • Measuring cups
  • Aluminum foil
  • Heat-resistant gloves or oven mitts

Directions

  1. Build your campfire and allow it to burn down to a bed of hot coals for even cooking. Avoid placing your skillet over tall flames, as they can burn the crust before the toppings cook.
  2. Lightly grease your cast iron skillet with olive oil or cooking spray.
  3. Press the pizza dough evenly into the bottom of the skillet, bringing it slightly up the sides.
  4. Place the skillet over the campfire grate and cook the crust for about 4-5 minutes until the bottom begins to set and lightly brown.
  5. While the crust cooks, whisk together the eggs, milk, salt, and pepper.
  6. Carefully pour the egg mixture over the crust.
  7. Sprinkle on the hash browns, cooked sausage, bacon, bell pepper, onion, mozzarella, and cheddar cheese.
  8. Cover the skillet tightly with aluminum foil or a lid.
  9. Continue cooking for 15-20 minutes, rotating the skillet occasionally for even heat, until the eggs are fully set and the cheese is melted. Cooking time may vary depending on the heat of your campfire.
  10. Remove from the fire, let cool for a few minutes, garnish with green onions if desired, slice, and serve.
